Cinnamon Raisin Slice

Ingredients

  • 1 & 3/4 Cups of Gluten Free Oats (175g)
  • 1/2 Cup of Walnuts (75g)
  • 1/3 Cup of Raisins (50g)
  • 2 Teaspoons of Cinnamon
  • 1/3 Cup of Melted Coconut Oil (80ml)
  • 1/3 Cup of Honey (80ml)
  • 2 Tablespoons of Coconut Sugar
  • 1 Tablespoon of Water

These are the best when you need something satisfying and sweet. Cinnamon and raisins are a classic combination and they taste so amazing with the crunchy walnuts and soft oats. The mixture of honey and coconut sugar for sweetness means they’re chewy with a little crisp, just perfection. You can whip these up in minutes and they’ll be gone just as fast!

Preheat oven to 180’C.

Add the gluten free oats to a large bowl. Roughly chop the walnuts and add them to the bowl with the raisins and cinnamon. Mix well.

In a small saucepan combine the honey, coconut sugar, water and a pinch of coarse salt. Let it bubble, whisk well and then take it off the heat.

Pour the mixture into the dry ingredients and mix well. Then pour in the melted coconut oil admix again.

Line a baking tin with parchment paper and then press the mixture very firmly into the tin. Bake at 180’C for about 20 minutes until golden.

Leave to cool completely on a wire rack before slicing.
