Soda Bread

Ingredients

  • 350ml of Nut Milk
  • 50ml of Apple Cider Vinegar
  • 250g of Plain Flour
  • 200g of Wholemeal Flour
  • 1 Teaspoon of Coconut Sugar
  • 1/2 Teaspoon of Sea Salt
  • 1 & 1/2 Teaspoons of Baking Soda

This is bread heaven and you could be slicing it in just 45 minutes. You can use all white flour but I like it best like this with some wholemeal too. Have it with soup, nut butter and jam, as a sandwich or just with some olive oil and sea salt.

Preheat the oven to 200’C.

In a medium bowl, mix together the nut milk and vinegar and set it aside.

In a large bowl, mix together the flour, coconut sugar, salt and baking soda. Make a well in the centre.


Pour the milk into the centre and with your hand in a claw shape, stir in circular movements until you have a dough, it will be a little sticky but shouldn’t be at all gloopy (if it is add a little more flour gradually).

Tip the dough out onto a floured baking tray and pat it into a round shape. Score the top with a cross using a sharp knife

Bake for about 35 minutes until golden all over. You’ll know it’s ready if you tap the bottom of the bread and it sounds hollow.

Let it cool on a wire rack before slicing.

      You could try it with gluten free flour (I like the Dove’s Farm one best) but I haven’t tested it with it so you might have to experiment a little to get the same texture x

    Hi could you use spelt flour some White & brown . Also could you substitute nut milk with coconut milk

      Is it coconut milk from a tin or carton? Tinned ones have a much higher fat content so wouldn’t be the same as nut milk in this one but the drinking/carton ones should be fine x

    Made this bread OMG it was lovely did not expect it to turn out as it was quiet sticky going in.The next time I’ll put i less milk as I found it difficult to lift up but I got there.
